No. there are no setting to hide the delete item in contract. You can see just a deletion indicator for the line item and its applicable for all types of purchasing document. There are two option available for deletion.
1. Deletion flag
2. Archive.
If you set deletion flag, then you can able to see the line item with deletion flag indicator.
If you archive the purchase document, then it will be erased from your database.
